Typical ingredients
- Properly fermented napa cabbage kimchi 500 g
- Optional pork 150 g or tofu 200 g for a cooked serving
- Onion 100 g and scallions 30 g
- Water or unsalted stock 500 ml for a stew
Method
- For the purchased aged kimchi, follow package storage and serving instructions; extended ageing is not the same as leaving food at room temperature.
- For a home-style stew, cut 500 g of mature kimchi into bite-size pieces. Cook with onion and optional pork, then add stock and simmer until cooked.
- Add tofu toward the end and scallions before serving. Adjust seasoning after tasting the broth.
- For homemade aged kimchi, use a tested fermentation and refrigeration method. This guide does not assign a months-long ageing period or shelf life to an unverified batch.
Serving & storage
Serve chilled beside rice, noodles, tofu or grilled dishes. Keep refrigerated according to the supplier label. Use clean utensils and follow the marked use-by date. Do not infer allergen absence from the dish name.
