Typical ingredients
- Korean radish 1 kg
- Non-iodized salt, amount according to a tested fermentation recipe
- Drinking water about 1 litre, adjusted to that recipe
- Pear 150 g; onion 80 g; scallions 40 g
- Garlic 15 g and ginger 5 g in a seasoning bag
- Optional whole mild green chili; omit for a chili-free home batch
Method
- Wash radish and prepare a clean food-safe fermentation vessel. Use small whole radishes or thick pieces.
- Salt the radish following a tested dongchimi method. Add pear, onion, scallions and the aromatic seasoning bag.
- Prepare brine according to that method, accounting for the salt already added. Keep the vegetables below the brine.
- Control fermentation time and temperature as specified in the tested method, then refrigerate. Serve the crisp radish and chilled broth. This example is not the supplier formulation.
