Typical ingredients
- Korean radish 1 kg
- Coarse salt 25 g and sugar 10 g for salting
- Korean chili flakes 40 g
- Garlic 20 g; ginger 5 g; scallions 40 g
- Fish sauce 25 ml; optional salted shrimp 10 g
Method
- Scrub radish and cut into even 2 cm cubes. Toss with salt and sugar; leave until lightly softened.
- Drain the released liquid, keeping a small amount to adjust the seasoning consistency.
- Combine chili, minced aromatics and fish sauce. Toss thoroughly with the cubes and scallions.
- Pack into a clean food-safe vessel. Follow a tested fermentation method for salinity, temperature and timing; then refrigerate. Fish sauce and shrimp introduce fish and crustacean allergens.
Serving & storage
